Whole Wheat Banana Zucchini Chocolate Chip Muffins

Whole Wheat Banana Zucchini Chocolate Chip Muffins are a FAVORITE at our house. We make them all year round. Every summer I shred zucchini from my garden & freeze in ziplock freezer bags to use for muffins. This year I ran out by February, so we had to buy fresh from the store. You can alter this recipe in many ways by adding nuts, chocolate chunks, etc.  This week, I made a fresh batch and the kids devoured them! It is so nice to have a healthy choice for our kids breakfast.  I have had many requests for this recipe, so I decided to finally share it!

Breakfast is served! Muffin, fruit & milk- Easy, healthy, very delicious & KID APPROVED

Happy Kids!

Whip up my delicious muffin recipe, I know you will love them! Perfect for breakfast, afternoon snack or anytime you need an extra snack. Freeze the rest for later and warm in the microwave for an instant warm delicious muffin!

Generations of Pie Baking

For as long as I can remember, my grandmother has made the best pie crust on earth. I grew up believing that all pies should taste that good and boy was I wrong! Lemon Meringue, Apple, Blackberry, Banana Cream, Cherry, Raspberry, Pumpkin, Peach...you name the flavor, my grandma made it and made it well!

As the last few years have went by, I have realized something that I wasn't sure I was ready to realize. My grandma is getting older. Do you realize how hard that is? I have always thought that she was going to live forever. She does everything for our family. She cooks, she takes care of, she listens, she sews, she crafts, she gives advice, she writes genealogy books, she prays, she quilts, she's the matriarch of our family. But again as time has passed these past couple years, I am realizing even more that I need to retain as much information as I can from her. She is filled with so much amazing knowledge and I want to soak it all in.

It's getting harder for her to make pies, as it is becoming a tiring task. My dad reminded me this summer that it was 'time' to learn to make grandma's "famous" pies. Every time he helps her with her computer (which is her pride & joy for writing her books and emailing friends across the country) she bakes my dad his favorite apple pie. He wants to make sure her delicious recipes & techniques are passed on to the women in our family.  So... I planned a girls pie baking day this past November. We brought dinner & grandma provided the pie ingredients with plenty of open counter space.

We brought together generations of women from our family for pie baking day! Below are just a few pictures from our evening of learning grandma's tips & tricks of her pie crust! We had a great time & learned a lot too.

We all took pies to freeze or bake at home. We baked our pie the next day and it was so delicious! The secret to an amazing pie is definitely the crust and I am so blessed to have this recipe & wonderful memories for years to come!

Maybe, just maybe I will share Grandma's pie recipe someday...but for now, I will hold it close to my heart & every time I bake these delicious pies, I will remember all of the amazing things my grandma has taught me over the last 33 years. I hope to make this girls pie baking day a yearly tradition to help grandma make her holiday pies and create lasting memories with grandma.

Brandy Slush Recipe

Living in Wisconsin, I have been drinking slush since I was a little girl. My mom always made non-alcoholic Pina Colada Slush and as I got older, we always made Brandy Slush. These holiday drinks have always been a staple at every Christmas & New Years functions for as long as I can remember.

Below you will find step by step directions on how to make simple & easy delicious Brandy Slush that is a perfect holiday drink!

First, let's begin with the main ingredients: Brandy, lemonade concentrate, orange juice concentrate, water and sugar.  Any brand of orange juice, lemonade and brandy will work just fine! We are partial to Korbel, so that is what we stick with!

Cook 1 cup of sugar with 3 1/2 cups of water until dissolved.

Once cooled, pour sugar water mix into bowl with 1 cup brandy, 6oz frozen lemonade concentrate, and 6oz frozen orange juice concentrate. Mix together until completely blended.

This is what your slush mix will look like before you place it into the freezer.

My favorite container to put slush in is large Tupperware bowls.  I usually make a double batch of slush in early December for all of our Christmas gatherings. Seal bowl tightly & place into freezer.

It usually takes 3-4 days for the slush mixture to freeze. Once frozen, you can scoop & serve!

Fill your glass half full with slush, then fill up the rest of the glass with 7UP or Sprite!

Enjoy your delicious holiday drink!

This recipe can also be altered to use Blackberry brandy as well. We have made it in the past & it is very delicious as well. Also, you can fill your glass with as much slush as you desire. Some just like a little slush for taste with more Sprite, some fill the glass and just add a splash of Sprite if they want a stronger drink! This drink is also perfect for a hot summer day!
